Something weird but very good

 I’m not very sure about what is this – some sort of Hawaiian curry? But maybe I’m insulting three cultures with one recipe, like the Banana Curry Pizza (yes, it exist!). Anyways, it’s very good, and I cook it every time I don’t know what to do: you need to fry in a spoon of oil some minced garlic and ginger, until you smell their beautiful aroma, then add some vegan minced pork, or even some tofu crumbled in little pieces – I will say, 100g per person, and some mango, frozen or fresh, 50g per person (choose it responsibly!); mix well, then season with a generous spoon of Massaman curry paste*, diluted in 200ml of water or vegetable broth; cook everything for 10/15 minutes, until the fruit is soft and warm and a nice cream is created; taste it for salt and then serve with some basmati rice, or use it as filling for some tacos (never tried myself, but why not.)


* This is the unusual ingredient; it’s a curry paste made of coriander, lemongrass, kaffir lime and garlic as ingredients of the basic recipe, with other that differ depending on region and tradition; it’s typical of the Muslim area of Thailand, and some etymologies explains the name massaman with the one of this religion. If you don’t find it, you can use a normal curry powder, easier to find in any supermarket, but I’ll say that it’s worthy a little bit more effort to find a curry paste, because it’s a real kick in this recipe, and an interesting alternative to the spice, in other recipes as well.
